 I came home from school to a new pair of glasses!

Jackson Hole Wyoming

The Grand Tetons on the way to Jackson. You could see them almost the whole way and you were right next to them in Jackson. It was such a beautiful drive.



Out of Idaho and in to Wyoming for the day.

They had two arches made out of antlers in the middle of Jackson Hole.


We did some exploring and found some pretty fun museums including this one with the cave bear skeleton in the back.


We got some delicious "Moo" ice cream. I had cookies-n-cream while Zach had huckleberry.

We enjoyed a delicious meal before the show in our great 3rd table seats.


These guys were amazing musicians and had some hilarious routines. It was a day well spent in Jackson Hole.


 

Bi-Winning

Okay, so I was just saying Zach and I are winners! We talk to bloggers and we win giveaways. But this one is extra cool because we won a bow tie that can be worn by guys or gals. If you have not checked out the "I believe in unicorns" blog, you need to. Ashley and her hubby are so fashion savvy, and it's fun to see them living life to the fullest.

Talk about good luck. These double rainbows lasted for quite a while last Sunday. I should have known we were going to win with a sign like that.

Summer

 This is our lovely garden. Well all but the 5 plants that are still inside. I love it and I love that Zach takes such good care of our leafy children. 



Summer barely started and Zach has already started on his sandal tan line. He is already like a million shades darker than I am.


The first water melon of the season! Zach prepared quite the festive dinner. We had home made burgers, fries and fry sauce. So good!

Funny Little Story

I got out of class one day to find my bike tangled up with another and wedged between the bike rail bars. I was trying to untangle the two bikes and free mine from the pole when I noticed a goofy looking kid sitting on benches near by. As I tugged and pulled and scratched some paint off someone's bike the goofy kid came over and helped hold one bike so I could pull the other on off it. I thanked him for his help. He then said "My friends totally would have used that as a way to ask you on a date".
I gave a courtesy laugh and said "I am married, so that really wouldn't work our for your friends".
"That wouldn't stop me," he boldly said.
"Oh, yes it would," I replied hopping on my bike.
A few seconds later he back tracked sounding embarrassed "Your right. That would stop me. Sorry I said that. It really would stop me."
"I know it would" I said riding away.
I pretty much laughed all the way home. The poor kid was so humiliated. If his mother had been there he would have been in deep trouble for sure and he knew it.


So for a quick up date:
Zach and I talk to famous bloggers like all the time so were pretty much famous now. Zach won a blog give away and today I became a model. You can look for my skills online at the BYU-Idaho book store in a few weeks.

Today

 

This is a little piece of what we got to enjoy a few weekends ago. This is my personal favorite right now. "Tree by the River" by Iron & Wine



 

Cookies:  
1 1/4 cups all-purpose flour 
3/4 cup Dutch-process cocoa powder 
1 teaspoon baking soda 
1/4 teaspoon baking powder 
1 1/2 cups sugar, plus more for flattening cookies 
10 tablespoons (1 1/4 sticks) unsalted butter, room temperature 
1 large egg, room temperature 
  1. Preheat oven to 375 degrees. Into a medium-size bowl, sift together flour, cocoa powder, baking soda, baking powder, and salt; set aside.
  2. In the bowl of an electric mixer fitted with the paddle attachment, cream sugar and butter until light and fluffy, about 2 minutes. Add egg; beat to combine. With mixer on low speed, gradually add the flour mixture; continue beating until dough is well combined.
  3. Using a 1 1/4-inch ice cream scoop, drop dough onto parchment-lined baking sheets about 2 inches apart. Dip bottom of a glass in sugar; press to flatten cookies to about 1/8 inch thick. (You may need to carefully remove dough from glass with a thin metal spatula.)
  4. Transfer to oven, and bake until cookies are firm, about 10 to 12 minutes, rotating baking sheets halfway through. Transfer baking sheets to wire racks to cool completely.
  5. Place cream filling in a pastry bag fitted with a coupler, and pipe about 1 tablespoon filling onto the flat side of half the cookies. Place remaining cookies on top, and gently press on each to squeeze filling to edges. 

    Cream Filling:  
    1/2 cup (1 stick) unsalted butter, room temperature 
    1/2 cup solid vegetable shortening 
    3 1/2 cups confectioners' sugar 
    1 tablespoon pure vanilla extract  

    In the bowl of an electric mixer fitted with the paddle attachment, cream butter and shortening until well combined. With mixer on low speed, gradually add the confectioners' sugar, and continue beating until light and fluffy, about 2 minutes. Add the vanilla, and beat to combine. Set aside at room temperature until ready to use.

Finished Projects

I love when I finish a project! Zach and I have been on a roll this week. We completed three projects. Him and his big coat rack project and me and my mini art projects.

Isn't it amazing? I love it and all the room it cleared our of our tiny closet! I feel like we have a brand new apartment between the new decor and the plants.


Remember these little guys? 


Well I finally turned them into picture/ letter holders! 


 I used an old wire hanger, pliers, hammer and nail to make holes to put the wire in and voila! Add laminated dye-cut letters and it is ready for any occasion.



So while thrifting I found these adorable mini clothespins for .25. Sadly the stain was to dark to just sand off so I painted them. like $1 later and I have the pretties little clothes pins ever! 



 When my clothes pins aren't holding up my Christmas or birthday decorations they will hold onto wedding and grad announcements and pictures!

The Rest of the Weekend

We Partied hard all weekend long. Saturday we enjoyed the warm weather and headed to Seven Peaks for some water park fun.



We enjoyed finding and bugging Paige at work. She was the one that hooked us up with the day passes. Yeah, she is kind of a big deal there.


After a good day in the sun we got Pho Vietnamese food. It was pretty delicious!



While Paige decorated Brock's birthday cake Zach and I took care of decking out Kimberly's room, while she was out of town, for her birthday.


After wonderful tacos for dinner we danced it up with some Kinect.





Then we ate cake and celebrated Brock's start of his 19th year of life. The cake Paige made was simply amazing. Cream cheese frosting filling with chocolate cake and covered in chocolate frosting.




It was a simply marvelous weekend.
